Cauliflower is a member of the brassicas family of popular vegetables including bok choy, broccoli, Brussels sprouts, cabbage, kale, and turnips. Cauliflower comes in many varieties, each with stunning vibrant colours of yellow, green, and purple.
Coloured cauliflower is generally more nutritionally valuable than their white counterpart due to a higher concentration of vitamins. The colouring of these varieties is caused by exposure to sunlight, which causes pigments such as beta-carotene to develop. As a result, colourful types of cauliflower have a more intense flavour with slightly sweet nuances compared to white cauliflower.
