Yellow nectarines taste both sweet and tart and have superior eating qualities when they yield slightly to gentle palm pressure. White nectarines are sweet when they are still firm and crunchy. Both types will express more juice as the fruit softens and white speckles around the tip of the nectarine is the best indicator of fruit sweetness.

Sliced nectarines like peaches, are a perfect accompaniment to meat dishes and a pleasing addition to salads or cheese and fruit platters.
